GHARSHM

This is yet another very authentic dish prepared mainly in Aragatsotn region of Armenia. It is a lentil soup made with walnuts, lentil and gharshm – a rare herb with a very unique taste. Gharshm is gathered at the foot of mount Aragats. The locals know exactly when the right season is for picking the freshest herbs. Gharshm is often compared to another traditional Armenian dish - Khash, with an exception that Gharshm is vegetarian. Once the soup is ready, the ultimate chef’s touch is adding a nicely chopped garlic on top and Armenian crispy lavash. This soup is very healthy and delicious – it’s rich in protein and microelements. It’s the kind of dish that is definitely worth traveling to Byurakan for!
